Summer Salad

Not Your Mama’s Salad

Hey Peeps! So it’s close to summer and I know we all want that summer body! Or just to be a bit healthier. I had the best salad of my life the other day, but it was expensive folks! And the way my bank account is set up I needed to figure out how to make it myself. Or create a fun version. So here it goes.

1 cup green leaf lettuce

1 cup spinach

1 cup grilled chicken

1 Roma tomato

1 small cucumber

5 green olives (sliced)

3 large strawberries (sliced)

½ cup blueberries

½ avocado

¼ cup blue cheese crumble- Feta is a great substitute if you hate blue cheese

I could eat this every day. And I have minus the cheese. Some days I don’t use the chicken either. Feel free to swap out veggies or fruit and post below if you do.
